I mostly go Vanilla as well.
The AI in Empire is God awful, though. Darthmod fixes a lot of shenanigans.

On Shogun 2 I have one little mod that doesn't let the CPU transform Ashigaru units into Samurai when he's in the fog of war. That sh!t is just flat out cheating.

Yeah, pretty much Skyrim. Nothing can compete with it's sense of epicness, which also just so happens to be the only thing that game did well.

I'm not sure about the most epic, but Demon's Souls has to be the highlight for me this gen.
