I was wondering if a PS2 would be perfectly playable on an HDTV. I can play and enjoy my PS1 on my HDTV without problems. I've finished Resident Evil 2 on it. PS2 should be fine too then, right?

Huh? If the PS1 worked and Sony is also an HDTV manufacturer, what do you think?
Why would the 1994 released PS1 work on HDTVs and not the 2000 released successor, the almighty PS2?
The answer is yes, the PS2 will work like your PS1. In fact, the AV cables are the same on PS1/PS2/PS3. Also, the PS2 is backwards compatible and plays PS1 games.
Also, get component cables for PS2 or at least Svideo, I owned the PS2 since it launched in 2000 and bought component cables for it way back then.
Make sure you use component cables with HDTV. It makes a big difference. For example, Burnout: Takedown was absolutely unplayable and all blurry with composite cables but with component cables, the graphics were crisp, clear and wasn't blurry anymore. Also, smaller 32" HDTV would probably work better than real large +46" televisions.
480p supported PS2 games look pretty good on HDTV. Gran Turismo 4 supports 1080i.... 16:9 ratio also helps.
