*Spoilers, obviously*
Let's see. I'll keep it to PS3 games only. As this topic would get massive with other titles. Well... games that are on the PS3, not just exclusives.
Radec from Killzone 2. Fighting him actually meant something, and he presented an interesting fight.
Scarecrow segments from Batman: Arkham Asylum was interesting, but not so much a boss. Still, it was really memorable.
Kessler from Infamous. Not too difficult but I'm bias to that character because that's my last name.
The Leviathan from Dead Space was a really clever design and one of the most memorable boss battles in the game.
Alma from Ninja Gaiden Sigma remains one of the most challenging bosses I've ever fought against. I can still beat the crap out of her, but I can never do it perfectly.
Wesker from Resident Evil 5. I love the series and finally confronting him was pretty cool.
Poseidon from God of War 3. Enough said.
Crying Wolf was my favorite boss from Metal Gear Solid 4. All the bosses were great but having a sniper battle in the middle of a blizzard on the same battlefield where you conquered Sniper Wolf... awesome. Add on top of that your enemy is a cyborg thing with a rail gun and you're surrounded by soldiers. I loved that fight.
Finally, I had an epick battle with False King in Demon's Souls. It was one of the fasted paced fights I had in that game and when he landed a hit it really hurt. It was really memorable but I can't say it would have been the same for all players.
That's all I can think of now. There are moments in Assassin's Creed 2, Resistance, and Uncharted that stand out but they're more set pieces and not so much bosses.
