I love the Dwarven Poker in The Witcher.

I was a fan of Pazaak in the KOTOR games.
Dwarf poker was alright, but before EE you could basically never lose, and after EE I tend to lose most games. :S

The "Wing Commander" arcade game in the orginal Wing Commander. I spent hours playing that thing.

I liked the pipes in Bioshock! I liked Pazaak as well and the cell stage in Spore. Wait, isn't that a mini game? I thought all Spore stages were minigames.

I can't believe nobody has mentioned the greatest crappy minigame of all time within a game:

Super Turbo Turkey Puncher 3

 

Also if you score 25000 points on it (it's in the kitchen if you missed it) you get an interesting email on your PDA.

I loved that minigame in Alien Homonid on the PDA thingy where you were like a 2D sticky figure guy

I liked those too. I also like the lock picking in Fallout 3.
