I'm severly biased, but I'm gonna say Star Wars. Only cause I've read a lot of books in that universe.

I'm not sure (ie could be completely off) but doesn't Elder Scrolls draw on lore from Baldur's gate and Neverwinter nights? If so, then I'd say that's fairly huge.
Lord of the rings... in terms of sheer detail, I'd say that's got the most. But it's hardly what I'd call deep.
I know nothing of Fallout.

No, it's not D&D based. It's kind of big compared to Warcraft, but not as big as the others. (Although Fallout really doesn't seem that deep to me. I haven't played any of the games, but it can't compare to LotR or Star Wars, can it?)
