Personally I'd love to be a Sangheili (Elite from Halo), because aliens are awesome, and being a human sucks. I'm not sure I'd want to be one for the rest of my life, but as I said, you don't have a choice. ;)

Well seeing as how I'd be a Funerary God for a religion that no longer exists, I believe I'd have a lot of free time on my hands.  Perhaps I'd finally learn how to snowboard.
