Why does everyone put Cheddar on tacos? Taco Bell does it. Del Taco does it. Everyone I know either uses cheddar or that taco mix which is mostly cheddar.

Because it's americanize? Chedder must be a lot cheaper than Monterrey Jack? My question to you, is why use hard shell tacos?

Because the rest of the taco is (should be) gooey. What with the Monterrey Jack, fresh tomato, sour cream and some Cholula sauce...perhaps occasionally a drop or two of Blair's 3am. The meat shouldn't be dry, either.

A soft shell just kind of disintegrates into more goo after the first few chews, whereas a hard shell will retain its crunch through much of the chew and provide a contrast to the saucier contents of the taco.

A real taco is either with barbacoa or Chorizo with cilantro and onions! Also, you use Corn Tortillas instead of flour

Always corn tortillas.

Barbacoa and Chorizo are good fillers but I'm trying to imitate Oaxaca cheese which I can't find here. Monterrey Jack is the closest I can get.

Well, if there's no Mexican community with a Mexican branded store like La Chiquita, El Paso Grande, or El Guero you won't be able to find it. Plus I prefer Chihuahua cheese over Oaxaca

There's some small locally owned Mexican stores but I've not been able to find it there.

Huh, we always use Colby Jack. Cheddar seems like it would be too sharp for a taco.

Colby jack all the way. Cheddar is too sharp unless it's sprinkled lightly.

Also, Taco Bell's Gordita Cruch was the shiznet. Gave me bowel movements that could be considered dangerous at a 20 mile radius but every bite was worth it.

There's some small locally owned Mexican stores but I've not been able to find it there.

How big are they? Smaller markets don't usually have them

Yeah, you're not going to find Oaxaca Cheese in those places, you need to find a Super Mercados (Super Market)

I like cheddar myself, preferably old. I also prefer soft tacos as well, much easier to eat in my opinion.

I don't put cheese on taco's, ever. I mean, it's OK, but I like my tacos like they're from a taqueria. Which basically means:

two griddled or grilled corn tortillas
meat
salsa
chopped onions
salsa

that's it. Super simple. Maybe a squeeze of lime if it's a fatty cut of meet like pork.

That's what I'm saying, it's always been corn tortillas and meats of your choice and sometimes with Cilantro and Diced onions. I usually add in some green sauce and I'm set!

Yep, those are REAL tacos! I like mine with cecina and sometimes Al Pastor

@br0kenrabbit: mozarella is the closest thing to Oaxaca you can find.

There are hard shell tacos, the are called "tacos dorados", the difference between them and soft tacos is that tacos dorados are deep fried in oil/lard until they become crispy. Of course that abomination you get at Taco Bell is definately not a real taco.

I had something like this last week. Best taco I've ever had. Authentic or not.

OT: I go w/ either pepper jack or something w/ more kick than cheddar.
