I liked Zelda: Phantom Hourglass and Mario Kart DS. I'd also like to add Hotel Dusk: Room 215 and Professor Layton tot hat list. The last 2 games had a great atmospheric style to them.
Well, Ninja Gaiden: Dragon Sword will be the best-looking DS game, hands down. But from what's currently released, I'd say Phantom Hourglass and Dragon Quest Monsters - Joker are two of the best-looking games I've played. Also, Pinky Street Kira Kira Music Hour. The character models in that game are very similar to the ones seen in Tales of Symphonia for the GCN.
