Halo 3 for me. It was the perfect culmination of an excellent trilogy. I loved the single-player campaign and getting to play with three other people was an awesome inclusion. The level of difficulty felt perfect especially when playing through the game on Legendary mode.
The Forge is just a whole lot of fun whether it's just to check out the layout of the maps on your own or make some really cool variants.
The video replay feature is incredibly cool and I'd like to see many more games make use of this kind of feature.
Then of course there is the online multi-player. Simply fantastic fun and very addictive.
I would have to say the first game. Despite the repetitive level design, the ability to play through all the stages cooperatively made this game greatly enjoyable and highly replayable (the last time I played a co-op game before that was Perfect Dark).
I really enjoyed the large levels, the vehicle portions, and just the gameplay in general. I certainly liked holding up to 10 clips of ammo as it helped with the arcade-like feel. Though the following games managed to tweak and perfect the series, it was definitely the first one that made the biggest impact for me.
