I've been thinking of re-playing every RE game (that I own) lately, for the fun of it. I remember having a blast playing RE3, albeit it being too short, still was enjoyable. Is the gamecube version better than the PS one? (as in, more content as well as better graphics?)

No not really it's basically a port from the PS1 version as far as I'm aware there are no extra features that the PS1 version didn't have.
[spoiler] There is Mercenaries mode when you finish the game which is a blast and really quite hard [/spoiler]
