UFOs up to type 5 (Destroyer) and type 6 (Assault Ship) are easily destroyed by swarms of X-COM hoverbikes and hovercars. Arm your hoverbikes with lasers and janitor missiles, and stick a few plasma guns and prophet launchers on the hovercars. Upgrade their engines to increase their speed. You might find the type 4 UFO (Fast Attack Ship) difficult to hit because of its great speed - missiles won't work, but lasers and plasma guns will do the job.
For the larger UFOs, it's crucial that you use alien technology against them. The big UFOs have armor ratings that are so high, normal weapons do very little damage. To use alien technology, you need to develop aircraft like the Retaliator.
