How can I escape dead money with the gold bars?

You can not escape easily with all 37 bars but depending on how much you can carry you can escape with 4 or 5 bars without carrying more than you can. The only way I can imagine escaping with all 37 is to use a stealth boy and don't let Eljiha detect you and lock him in the vault. You are going to have to start going back the way you came to get to the vault. It might take a few trys.
