On career, when you get to pick a rival at Monza, does the Monza race count in the rivalry? So it's best of 8 rather than 7? It did count towards my score but just want to check.

It's best out of 5 and yes, the race after you select a rival counts.

Season challenge - best out of 3
Career - rival challenge ends whenever one of the 2 drivers wins the driver's championship.

I've done 3 full seasons in season challenge, one in each difficulty level, all of them were best out of 3 (meaning you need to outrace your rival in 2 races to beat him and take his seat).
I've only played 1 full season in career, I picked Hamilton as a rival, after I got enough points to win the driver's championship (at Suzuka iirc) the rival challenge ended and McLaren offered me a contract.

Are you sure it wasn't because you had beaten Hamilton at least three times to win the rival challenge? When you choose your rival for the rival challenge in career mode, the game will notify you that it is a best-of-five competition (or best of 7, or whatever it is).
