Possessing & unpossessing a target works like this.
Possessing a target.
Possessed target -Target is under your control
Hostiles seeing the target - Acts as if nothing has happened since all they see is someone else, like a friendly soldier for example.
Unpossessing a target:
Possessed target - Is confused for a time and can either be killed/knocked out or evaded before he/she recovers but will see you after that time if you remain and does nothing of course.
Hostiles seeing the target - Gets alarmed since you pop up again next to the previously possessed target and they can now see if you are in plain sight for them to see.
In short, don't unpossess someone when there is other hostile people/creatures around to see you but move into some cover, preferably somewhere which has a place for you to hide the body if you intend to kill/knock your previous host out.

After you un-possess someone, they are briefly disoriented and will not see you. If you can get away before they recover, you won't alert them.

As long as the characters "spidy senses" don't turn red your ok.
