What really is the hardest boss? There's easiest, but as you go further in the game you'll realize every boss has its strategy.
That said, the stupid Bed of Chaos is the cheapest boss. I guess it's the hardest, but I feel like no matter how good you get in Dark Souls this stupid boss will cheaply kill you regardless.
What about you guys?

BoC for sure. Capra demon at a close second since you can still easily die if you make any kind of mistake at the start of the fight.

i'm level 150, and i would still have problems with the Capra demon, i just know it....
those dogs are sooo stubborn, and the demon just keeps swinging at you its hard..

Yeah, id say capra demon as well. You have cheap deaths with both, but you actually have a boss to kill with capra.

its not the shields that i'm worried about.... i can have the best shield in the game and still get owned by it... its how stubborn the dogs and the demon are....
when i first walk into the light theres 2 or 3 dogs that attack right away i forgot how many...
so you have a HUGE demon swinging at you like mad in front of you, that your blocking with your shield, and then behind you, you have those dogs that run and hit you...

Fast roll, then make for the stairs.
i'll have to try that .... because i can only stay alive for like 10 seconds... and i'm rolling, and dodging as much as i can!

The dogs and the capra will block me a few steps before the stairs 4/5 times. Once I'm lucky enough to make it to the top, I'm fine

When you first come in the door, run towards the Demon and do a running jump on the right side (your right, his left) when he swings at you. Run up the stairs kill dogs, fight over. It's really easy when you figure it out, but all it takes is one mistake and you're stunlocked to death.

My easiest have been O&S and Gaping Dragon. O&S were both 1 shots for me on ng and ng+, even took Smough down first on ng+.
Nito is damn difficult for me.

Bed of Chaos and Gaping Dragon have given me the most trouble (BoC because its cheap and Gaping Dragon because I was still terrible at that point.)
Easiest have been Pinwheel, 4 Kings and Seath.
