First of all, the best option for Man-serpent would be to go with +15 right? (as opposed to lightning/fire/chaos/whatever--sorry-like I said, I'm relatively new here :p). That way, it gets good physical (275) and scales with B in strength.
Meanwhile, the Black Knight sword, when fully upgraded, has 330 physical, and a C rating in strength and E in dexterity. I have 30 strength (going for 40 by the time I'm done), and 18 dexterity. Which one would be better? Thanks in advance.

Man-serpent sword (40 STR, 18 DEX) AR: 521 1H, can be enchanted
BK sword (same stats) AR: 500 1H, cannot be enchanted
Keep in mind, though, that you might be much more effective with the "weaker" sword if you're more comfortable with its moveset.

Anyways.... its unkown whether the Black Knight Sword at +5 hits harder or not then the Man Serpant greatsword at +15.
enchanting is a big deal... but its not necessary in order to kick anyones ass.

Hmm, okay so I guess its Man-serpent. But, out of curiosity, what exactly is an enchantment? I thought it was adding lightning/fire/etc. attributes to a weapon through modification, or is it something else, like being able to be "resined" as the first poster said (which means u can use items like "gold pine resin" right?). Lol, sorry for my newbness.
Enchantments range from consumables such as gold pine resin or sorceries/miracles such as crystal magic weapon and sunlight/darkmoon blade. For example I have a demon great machete +15 with AR around 500-600 and when I enchant it with sunlight blade it gets AR around 800-900.

generally the duration is too short for PvE play (maybe could use against a boss) but great for PVP
resin covers several item types that can apply extra fire, lightning or poison (i think that's all the resin) damage to your weapon temporarily, also good for boss fights/PVP (a bit better for PVE cause you can carry a lot of resin, but Magic Weapon and Sunlight Blade have very few uses)
unfortunately, no Sticky White Stuff this time, so can't add magic damage without a spell/upgrade path
none of these items/spells can be used on items given extra damage from another source (ie most upgrade paths) or most weapons that require demon or twinkling titanite to upgrade (a few notable exceptions, like the Silver Knight Straight Sword)
