I absolutely loved Circle of the Moon. I have played other castlevania games in the past but I was really to young to appreciate them as they were...that all changed once my mom got me Circle of the moon on my GBA way back when. I really loved the atmosphere and take on sidescrolling adventure. I also loved the music and the card system that gave you different weapons. I never managed to invest time into other games in the series however.
So my question to you guys is...which Castlevania games should I bother to invest in. from what I can tell the fan-base is more or less torn on which ones are enjoyable or not lol.
All consoles and handhelds are at my disposal.

I suppose if it's on the GBA, it's probably the Metroidvania style (I haven't played any portable Castlevania games personally), and if so, I'd say give Symphony of the Night, on PS1, a go.
Also Simon's Quest, on the NES. It's the first Castlevania that wasn't a linear level-based game, and had a bigger world with secrets and puzzles. Great music too.
You could check out the multiplayer Castlevania, Harmony of Despair on the PS Store too. It's fun, you can play solo, online, or local multiplayer, but it doesn't have any real plot to speak of.
And, of course, the Metroid games. They're great.

Aria of Sorrow - GBA
Castlevania Adventure Rebirth - WiiWare
Dracula X Chronicles - PSP

Aria is the one you want. It was my second Castlevania after CoTM and it blew me away at the time.

Well, I like most of the Castlevanias, so... yeah.
Circle of the Moon and Order of Ecclesia are the two 'metroidvanias' that come closest to the older games, imo, so I'd suggest trying OoE, and then try Dracula X + Symphony of the Night.
If you like Dracula X, go on to try Super Castlevania IV, then Castlevania: Bloodlines. If you liked Bloodlines and OoE, try Portrait of Ruin and Castlevania III. If you want more, do Aria of Sorrow and Dawn of Sorrow.
From there, just go nuts. Castlevania 1, the PS1 games, Harmony of Dissonance, etc...
