To access an option which allows you to create your own dance routines, simply beat the game on Easy or above difficulty setting with the character that you wish to use for the dance preview.

Highlight a character from the player select screen, hold Select and press X. You'll get that character's alternate costume.

Pick Burger Dog or Hamm to play as, and do your special attack twice in a row.
