    You have to have reached Sequence 6, Memory 4: A little Errand.
    Ezio talks to Sofia without his hood on and when the mission comes up, decline it and he will keep his hood down, even if you exit replay.
    Simply go back and finish it and it will put his hood back on.
    It doesn't work with the Old Altair outfit or either of the master armors.

    It only works with the turkish assassin armor

    and on ishaks armour it takes off the mask i think and it works with the normal outfit too
